3. Pickled vegetables:
Pickled vegetables are high-salt foods. Excessive intake of salt can damage the gastric mucosa, leading to gastritis or gastric ulcers. Moreover, pickled vegetables may contain a more formidable "health killer" – nitrite. While vegetables naturally contain nitrate, during the pickling process, it may be reduced to nitrite. Nitrite itself is not carcinogenic, but once it enters the body, it can transform into potent carcinogens known as nitrosamines. Therefore, occasional consumption of pickled foods is harmless, but long-term excessive consumption increases the risk of stomach cancer.
